Quinoa pancakes and breakfast oatmeal

 Trying to be healthier and so I tried some recipes using quinoa.  I was skeptical but found that I actually liked the things I made and even better the kids liked them too!  We liked the pancakes so much I made a double batch and we have been eating them for snacks!

I adapted this recipe from the pajama chef found here.  So here is the recipe that I made:
1 C cooked quinoa
3/4 C Whole Wheat flour*
2 tsp Baking Powder
1/4 C Milk ( i used 2% 'cause that is what we drink)
1 Large egg + 1 Large egg white
1 TBLSP Apple Sauce*
1 1/2 TBLSP Agave*
2 TBLSP Flaxmeal

*then I added to taste: Vanilla, cinnamon, blueberries, red huckleberries, and shredded apples (I picked the berries last summer)
*the ingredients marked are the ones I changed or subbed


they are thick, so I cooked them at a low heat

They are awesome for a snack to take along 

 For the oatmeal, I just boiled 2 C of milk and then added 1 C of quinoa, let it cook til done then added vanilla, cinnamon, blueberries, huckleberries, and bananas, the fruit definitely made it edible!

I have been on a trip and super busy since I got home, but thought I would take a short brake to show you what I have been up to.
I sewed this t shirt into a bag and then the kids put their handprints on it and we stenciled it for their grandma's birthday.
