make ahead egg bacon muffin melts

Found this yummy recipe on this blog.  We are loving that it is a make ahead easy breakfast.  I placed some in a pan and froze them, then transferred them to a ziplock, will let you know how they turn out when I pull one out and heat it up!  I also added a sprinkle of parmesan cheese to the top and it was fabulous!  You could easily add jalapenos, etc to this recipe to make it spicier.
**I have pulled all of the frozen ones out and they are awesome.  I micro them for 40 sec then place in toaster oven on toast til warm and bubbly, that makes the muffin crisp again:)
